Si le ense\u00f1as a pescar, le nutrir\u00e1s toda su vida.\u201d<\/p><\/blockquote>\n<p>Aix\u00f2 \u00e9s el que ha fet aquest Mestre Forner amb nosaltres, del que hem apr\u00e8s i seguim aprenent cada dia.\u00a0\u00c9s per aix\u00f2 que volem fer-li una menci\u00f3 especial a la nostre web:<\/p>\n<blockquote><p>Sr. Eduard Crespo Almela, de la Fleca Balmes de Barcelona, moltes gr\u00e0cies per la paci\u00e8ncia, i la confian\u00e7a que has dipositat en nosaltres i per l\u2019amor a la professi\u00f3, i sobretot per ser tan i tan bona gent.<\/p><\/blockquote>\n<p>I pels que no el coneixeu\u2026..<\/p>\n<p>L\u2019Eduard va n\u00e9ixer i es va criar entre sacs de farina, fornades i l\u2019olor de pans acabats de fer i coure. D\u2019aqu\u00ed \u00e9s f\u00e0cil entendre que els seus jocs infantils foren formar escultures amb la massa.<\/p>\n<p>Per\u00f2 va ser l\u2019any 1972, en tornar de la mili, quan l\u2019Eduard es va fer c\u00e0rrec de la fleca despr\u00e9s d\u2019aprendre els secrets de l\u2019alqu\u00edmia de l\u2019obrador del seu pare Manuel. Ben aviat va decidir incorporar noves f\u00f3rmules en les seves creacions amb tot tipus de cereals i sabors sense perdre mai les normes i bases artesanes i de qualitat establertes pel seu pare i el seu avi.<\/p>\n<p>En veure que el seu treball era reconegut pels seus clients es va sentir m\u00e9s segur i va entrar de ple en l\u2019elaboraci\u00f3 m\u00e9s creativa i de qualitat, fet que l\u2019ha diferenciat en ser una de les millors fleques artesanes de la ciutat de Barcelona i guanyador de molts premis i guardons d\u2019un gran reconeixement internacional.<\/p>\n<h2>Qu\u00e8 \u00e9s la massa mare?<\/h2>\n<p><img loading=\"lazy\" class=\"alignnone size-full wp-image-1886\" src=\"https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/Massa-mare-com-creix.jpg\" alt=\"\" width=\"1200\" height=\"695\" srcset=\"https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/Massa-mare-com-creix.jpg 1200w, https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/Massa-mare-com-creix-300x174.jpg 300w, https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/Massa-mare-com-creix-1024x593.jpg 1024w, https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/Massa-mare-com-creix-768x445.jpg 768w, https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/Massa-mare-com-creix-600x348.jpg 600w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/p>\n<p>Segons les llegendes, un dia, en deixar unes restes de farina i aigua al aire, alg\u00fa va veure que aquesta massa desenvolupava en el seu interior, unes bombolles i que al cuinar aquesta massa \u201cfermentada\u201d es guanyava en sabor i textura respecte al pa tal i com es coneixia fins aquell moment.<\/p>\n<p>Sembla ser que aquest \u00a0va ser el descobriment \u201ccasual\u201d de la massa mare, que va marcar un abans i un despr\u00e9s en la preparaci\u00f3 del pa. Abans del seu descobriment, el pa no creixia i no tenia una molla tan suau i esponjosa.<\/p>\n<p><strong>La massa mare, no \u00e9s altre cosa que el llevat natural<\/strong>, aquell ingredient que fa possible que el pa creixi de volum i que en la seva molla es cre\u00efn petites bombolles d\u2019aire.<\/p>\n<p>Des de un punt de vista biol\u00f2gic,\u00a0<strong>la massa mare es definiria com un brou de cultiu en el que viuen milers de bact\u00e8ries bones<\/strong> que es dediquen a transformar els\u00a0elements\u00a0de la farina en anh\u00eddrid carb\u00f2nic.<\/p>\n<p>L\u2019anh\u00eddrid carb\u00f2nic\u00a0es queda atrapat\u00a0a les \u201cxarxes\u201d creades per les mol\u00e8cules\u00a0de\u00a0gluten\u00a0que forma la farina al barrejar-se amb l\u2019aigua i d\u2019aqu\u00ed les bombolles que trobem a la molla del pa.<\/p>\n<p>El m\u00e9s interessant de la massa mare es la seva\u00a0<strong>perdurabilitat en el temps<\/strong>, sempre sota certes cures. Aniran a buscar menjar i a reproduir-se \u201ccom bojos\u201d intentant guanyar la partida a la resta, que no son de la seva mateixa esp\u00e8cie, i aix\u00f2 fa que la fermentaci\u00f3 d\u2019un pa elaborat amb massa mare sigui molt diferent a la d\u2019un pa elaborat nom\u00e9s amb llevat de forn o d\u2019altres agents llevants.<\/p>\n<p>La principal caracter\u00edstica \u00e9s que la fermentaci\u00f3 ser\u00e0 molt lenta i aix\u00f2 \u00e9s molt important a l\u2019 hora de valorar els beneficis del pa a la salut.<\/p>\n<p>Aquesta fermentaci\u00f3 lenta permetr\u00e0 que els enzims realitzin la seva feina que principalment consisteix, per una banda convertir els sucres simples en sucres complexes i per tant, aconseguir que el pa baixi el seu \u00edndex de gluc\u00e8mia (IG) i passi de un \u00a0IG alt a un IG baix i aconseguir que \u201cel pa no engreixi\u201d i per altre banda, els enzims s\u2019encarreguen de la degradaci\u00f3 del gluten, fent que puguem digerir el pa c\u00f2modament i no a ver de realitzar un esfor\u00e7 addicional a la seva digesti\u00f3.<\/p>\n<h2><strong>Per qu\u00e8 est\u00e0 ara tant de moda la massa mare, que sembla que l\u2019hem inventat fa nom\u00e9s uns anys?<\/strong><\/h2>\n<p><img loading=\"lazy\" class=\"alignnone size-full wp-image-1887\" src=\"https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/pa-casol\u00e0-1.jpg\" alt=\"\" width=\"1824\" height=\"1176\" srcset=\"https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/pa-casol\u00e0-1.jpg 1824w, https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/pa-casol\u00e0-1-300x193.jpg 300w, https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/pa-casol\u00e0-1-1024x660.jpg 1024w, https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/pa-casol\u00e0-1-768x495.jpg 768w, https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/pa-casol\u00e0-1-1536x990.jpg 1536w, https:\/\/lanottaberga.com\/wp-content\/uploads\/2020\/06\/pa-casol\u00e0-1-600x387.jpg 600w\" sizes=\"(max-width: 1824px) 100vw, 1824px\" \/><\/p>\n<p>La massa mare realment hauria de denominar-se llevat salvatge o llevat natural i t\u00e9 na m\u00e9s i na menys que 14.000 anys d\u2019exist\u00e8ncia, dels quals els darrers 6.000 anys estan documentats.<\/p>\n<p>Actualment, el pa s\u2019ha devaluat tant amb la producci\u00f3 industrial i s\u2019ha convertit en un producte tant poc saludable que ha nascut un corrent extremadament radical que lluita contra aquesta desnaturalitzaci\u00f3 d\u2019un producte b\u00e0sic a la dieta occidental com \u00e9s i ha sigut durant milers d\u2019anys el pa.\u00a0La massa mare \u00e9s una forma de garantir que el pa realitzat amb ella \u00e9s un pa sa de veritat.<\/p>\n<p>No obstant aix\u00f2, veiem com la industria ens enganya i fa servir la nostre ignor\u00e0ncia al respecte simplement perqu\u00e8 la manca de legislaci\u00f3 sobre el tema els hi ho permet.<\/p>\n<p>Podem veure com als envasos poden posar \u201cpa de massa mare\u201d a un pa que en realitat est\u00e0 elaborat amb productes qu\u00edmics obtinguts a laboratoris als que denominen igualment massa mare sense que realment ho sigui.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>","protected":false},"excerpt":{"rendered":"<p>Disculpa, pero esta entrada est\u00e1 disponible s\u00f3lo en Catal\u00e1n.Elaboracions artesanals, tant de les nostres masses de pizza com del pa que servim a la sala, apostant per lo tradicional i els ingredients naturals, saludables, sense additius ni conservants.
